I completely eliminated rice off my diet for 3 months now. I’m gradually shifting to a pescetarian diet then hopefully go vegetarian/vegan. Yay to me!
I made myself grilled fish and kangkong salad for brunch. We got lots of kangkong/water spinach (Ipomoea aquatica) growing in the garden so I grabbed a bunch and boiled it, added tomatoes and green chilis and added calamansi juice, a bit of sugar, and a dash of salt. Surprisingly turned out really tasty.
